Bruschetta Chicken Recipe


Yes, it tastes just as good and fresh as it looks! Bruschetta chicken is one of my go-to recipes during a busy week. It is easy to prepare and makes great leftovers for a night or two after I prepare it. I hope you enjoy it as much as I do!

I N G R E D I E N T S:

3-4 chicken breasts
1 handful of fresh basil
1 cup fresh mozzarella cheese
1 clove of garlic
1/2 red onion, small
4 tomatoes, small
1 tsp balsamic vinegar
1 tsp extra virgin olive oil
1/8 tsp sea salt

I N S T R U C T I O N S:

Light the grill to cook the chicken breasts. I usually cook smaller chicken breasts for 10-12 minutes depending on the size. While the chicken cooks, I dice up my tomato, mozzarella cheese, and red onion. Combine the diced produce in a bowl with minced garlic, sliced basil, balsamic vinegar, olive oil and sea salt. I cover the bowl with some foil and place it in the refrigerator to marinate for a few minutes while the chicken finishes cooking. Once the chicken comes off the grill, I plate it and add the delicious bruschetta topping. I typically serve this dish with roasted potatoes topped with olive oil and basil, along with sautéed zucchini and squash or green beans.
